Embassy Suites by Hilton Minneapolis Bloomington Edina has finished a top-to-bottom renovation that its general manager says was more than a cosmetic refresh. The property at 2800 American Blvd. W. put more than $11 million into the project, according to the Sun Current.
Work started in November 2025 and wrapped this month. Every one of the hotel's 232 two-room suites got new interiors — 102 king rooms, 120 double-queen rooms and 10 accessible units. The hotel's signature open-air atrium, where guests get complimentary breakfast and an evening reception, was redone too, along with the 5,600 square feet of meeting and event space and the Iron Range Restaurant & Bar.
The hotel also added an indoor pool and a fitness center that weren't there before. The new look leans into a Minnesota theme — water and ice tones, natural wood, cabin-style touches — designed by Ste Marie Design of Shoreview, with construction handled by Apex Renovations Group of Rockford.

"These upgrades are about more than aesthetics, they're about creating a place our guests" can take pride in, General Manager Jason Lott said, per the Sun Current.
The renovation comes with a rebrand: the property is now marketed as Embassy Suites by Hilton Minneapolis Bloomington Edina, tying it more explicitly to the wider metro rather than just Bloomington.
